So today I really fancied some home made cookies, and decided to go all out and make triple chocolate cookies! If you're going to eat cookies and be unhealthy you might as well go all the way and put as much chocolate as possible in them, right?
This is the best recipe I've used for cookies ever, they taste so good so I really wanted to share it with you all.
This recipe makes 10 large cookies
What you'll need:
200g Butter (at room temperature)
300g Caster Sugar
1 Egg
275g Self Raising Flour
75g Cocoa Powder
3 tbsp Milk
A Large Bar of Milk Chocolate (I used Galaxy)
A Large Bar of Dark Chocolate (I used the co-ops own)
A Large Bar of White Chocolate (I used Milky Bar)
A few (depends on their size) baking trays lined with grease proof paper
Firstly set your oven to 200 degrees.
Then, while it is pre-heating, mix together the butter and sugar. I used an electric mixer but you can mix it by hand. Make sure it's a smooth consistency.
Now add the egg and mix again until it's nice and fluffy.
Next add the flour, cocoa powder and milk and mix again. I swapped to mixing by hand with a wooden spoon at this point as the mixture was too thick that I didn't want to damage my mixer. If you find the mixture is too dry then add a little more milk, but remember cookie dough should be firmer than cake mixture so don't make it too runny.
Now brake up the bars of chocolate and add them to your cookie dough and give it a good mix.
Divide the mixture up into 10 even balls and then squash them down slightly on your lined baking trays. Leave a little room in between them as they will grow in the oven.
Bake in the oven for 10 minutes, they may still look slightly soft but this is how they need to be, leave them to cool for 30 minutes and they will harden slightly but still be nice and soft and gooey when you bight into them! If you over cook them they will end up more like biscuits.
